Commercial dining soon adopted the format. Casual restaurant chains re-engineered the dish to work in fast-paced kitchens without long bake times. In October 2022, regional taco chain Condado Tacos introduced its "Secret Taco: the Stuffed Pepper Taco," turning the classic components, seasoned beef, diced peppers, and melting cheese, into handheld street food.
The format spread because it cuts line times. In restaurant kitchens, roasting whole peppers to order takes too long, and pre-roasting leaves them soggy on a steam table. Sautéing diced peppers to order preserves texture and speeds up service, echoing the same efficiencies home cooks value on busy weeknights.
