The raw material behind douchi is typically the black-coated variety of soybean (Glycine max), though yellow soybeans were historically inoculated through identical methods. Transforming dry, bitter legumes into glossy, aromatic pearls requires a two-stage fermentation process that balances precise environmental moisture and ambient temperature.

In the primary fermentation phase, washed and soaked soybeans are steamed until tender, drained, and cooled. Producers then introduce starter cultures dominated by the filamentous fungus Aspergillus oryzae, the same koji mold responsible for miso, sake, and soy sauce, or, in certain regional traditions, specific strains of Mucor molds. Over roughly 72 to 96 hours inside ventilated incubation chambers maintained at 28°C, 32°C, fungal hyphae blanket the beans in a delicate white-gray fuzz.

During this stage, the mold secretes vigorous cocktails of amylase, protease, and lipase enzymes. Proteases slice dense, coiled soy proteins into short peptide chains and free amino acids, with glutamic acid taking center stage. Lipases crack fatty acids into aromatic esters and volatile ketones.

The secondary fermentation halts mold propagation and develops stability. Workers rinse or gently agitate the molded beans, toss them with coarse sea salt at concentrations between 12% and 18%, and frequently blend in Shaoxing rice wine, ginger juice, or ground spices. The salted beans pack tightly into ceramic crocks or fermentation tanks to cure for several months. Salt suppresses spoilage bacteria while halophilic lactic acid bacteria slowly lower pH levels, producing lactic and succinic acids. The beans darken to an ink-black hue through non-enzymatic Maillard browning, yielding soft, chewy morsels packed with savory compounds.
