Once you dial in the base cooking technique, you can use frozen chicken for quick, high-flavor weeknight meals. A reliable favorite is recreating KFC-style popcorn chicken straight from raw frozen breasts without deep frying.
Take your frozen breasts through Phase 1 for roughly 8 minutes, bringing them to a semi-firm, partially thawed state. Transfer the meat to a cutting board. It will be stiff enough to slice easily without sliding around under the knife. Dice the chicken into uniform ¾-inch bite-sized cubes.
Toss the cubes in a bowl with a tablespoon of pickle brine or buttermilk, then coat them in seasoned cornstarch and crushed panko breadcrumbs.
