From Underground Pop-up to Michelin Recognition: the Rise of Los Burritos Juárez
The flour tortilla is the backbone of the entire operation. Most commercial restaurant tortillas rely on shelf-stable preservatives, chemical conditioners, and vegetable shortenings that turn gummy under steam. At Los Burritos Juárez, production starts daily from scratch. The formula is elemental: unbleached flour, scalding hot water, sea salt, and whipped pork lard sourced from heritage hogs.
Every test batch undergoes a rigorous resting period to relax the gluten network before being portioned into small testales. Line cooks roll each portion by hand, stretching the dough until it achieves near-translucent thinness before searing it across a blazing-hot steel comal for roughly fifteen seconds per side. The surface develops blistered golden char spots while retaining a tender, flaky elasticity that holds rich gravies without tearing or turning soggy.
Delgado also introduced a vegetable shortening alternative to ensure vegetarian diners could access the same textural experience. The plant-based dough is rolled with identical precision, capturing that signature chew without sacrificing the heritage technique.
